Slow Cooker Chicken Strong-enough (Stroganoff)

My husband loves soupy dishes like stroganoff but the problem is he purposefully eats all the meaty parts and leaves the soup/sauce for the rest of us.  So when I make stroganoff it has to be VERY meaty...hence, "Strong enough".  This version is very good and tasty and there's plenty to go around.  Remember this is a meal to feed 7 people for 2 days (my big Sunday meal).  So, if you're looking for smaller portions, divide the recipe in half or as needed.  I served this over whole wheat thin spaghetti to try something different.  It is good over egg noodles and rice as well.


You will need:
6 lbs. chicken breast, cut in 1/2" - 1" thick pieces
1 large sweet onion, diced
2 cups mushrooms, sliced (or diced)
3 cans cream of mushroom soup
1 can cream of onion soup
1/3 cup water or chicken broth (not shown)
2 tbsp. garlic, minced (not shown)
2 cups sour cream

  1. In a 5 or 6 quart crockpot, add 1/2 of chicken pieces to slow cooker.
  2. Layer 1/2 of diced onions and mushrooms on top of chicken.  Repeat layers with remaining chicken, then onions and mushrooms.
  3. Mix soup, water (or broth) and garlic.  Add to slow cooker.
  4. Cook on high for 3 1/2 hours or low for 7 1/2 hours.
  5. Add sour cream and cook for additional 1/2 hour.
  6. Serve hot over noodles or rice.
